Characteristics: Cabbage-like flavor abounds from the numerous, tender, small heads of the Catskill Brussels Sprouts. Heads grow to be 1 to 2 inches across and mature in succession on strong stalks. These are easy to pick, high in vitamin C, and low in calories.

Preparation Ideas: Toss with thyme, olive oil, and salt then roast

Instructions: Start seeds indoors 6-8 weeks before the last killing frost in the spring. Or, sow 2-3 seeds together outdoors every 2 feet. Thin to 1 plant every 2 feet when seedlings are 1 inch tall. As sprouts begin to form, break off lower leaves.

Suggestions: When sprouts reach 1 inch or more in diameter, begin harvest with the lower sprouts and work up the stalk. A good producer again when planted in summer for fall harvest until frost.
