Georgia Southern Collards are dark, blue-green stemmed plants. They form a large, open head of leaves high in vitamins A, B1, B2, and C. These are particularly valuable in the south for winter greens.
Mild flavor improves with light frost
Put these leaves in a pot with enough water to cover them and add 1/2 cup of salt before letting them soak

Start seeds indoors 6 weeks before the last killing frost in the spring. Or, sow 2 seeds together every 4 inches. Thin to 1 plant every 2 feet when seedlings are 2 inches tall.
Save thinning of young plants to eat early as fresh, tender greens. A light frost improves the flavor of the collards and will not injure leaves.
