Crisp and Creamy Mini Cucumber Sandwiches:
Perfect Cucumber Recipe for Summer

Simple and Delicious

These little sandwiches are the perfect bite-sized appetizer for any gathering. And what better way to use your fresh picked cucumbers, nothing beats that crunch. Serve at your summer parties or brunches — everyone will LOVE them!

Ingredients:

1 baguette
1-2 cucumbers (we used The Big Dill variety)
1 packet of ranch dressing mix
1 package of cream cheese
Black Pepper
Fresh dill

Make your own ranch dressing mix from scratch by following these easy steps:
2 1/2 tablespoons buttermilk powder or cream of tartar powder
1/2 teaspoon parsley
1/2 teaspoon dill
1 teaspoon onion powder
3/4 teaspoon onion flakes
1/2 teaspoon garlic powder
1/4 teaspoon salt
pinch of pepper
3/4 teaspoon chives

Instructions:

Soften cream cheese to make it easier to mix. You can do this while you are prepping the baguette and cucumber.

Slice your baguette into 1/2" slices. In an average size baguette, this should give you at least 36 usable slices.

Peel the cucumber above a table

Peel your cucumber. If you like, you can leave small sections of peel on your cucumber for a little extra color.

Once your cucumber is peeled, you can slice into 1/4" slices. You will want these slices thick enough to give you some crunch! 

Stir mixture in bowl

Now that your cream cheese has had a chance to soften, add in the dry ranch dressing mix and combine well.

Spread cream cheese on bread

Spread the cream cheese misture onto each slice of your baguette.

Place cucumber on bread on plate

Add a slice of fresh cucumber on top the cream cheese spread on each piece of bread.

Add dill on top of bread and cucumber

To finish, add a twist of freshly ground black pepper. If you like dill, you can top off with a small sprig for a little more flavor.

Now you're ready to serve! 
Tip: You can get the cream cheese mixture ready in advance for faster prep. Just make sure to cover and refrigerate.
