Homemade Roasted Adobo Salsa

If you're anything like me, you know exactly where I'll be found during a party: Wherever there's food. 
It's not that I'm anti-social, it's just that I really like good food. Maybe it's my nostalgia speaking, but I can specifically recall some of the dishes that my friends and family have brought to barbecues, cookouts, and potlucks. It's a wonderful time for everybody to share (and to show off) their unique culinary expertise.

One such dish I can vividly recall is homemade salsa. I've tasted many a homemade salsa and everybody has their own style; spicy, tangy, rich, chunky, fruity, but the style I've come to love most is a Roasted Adobo Salsa. So, I've crafted my own simple recipe that I can make with ingredients that I grow in my own backyard using Ferry-Morse seeds.

The line-up

Prep Time: 25 minutes | Servings: 2 1/2 Cups


4 Tomatoes (Quartered)
Recommended varieties: Roma or San Marzzano
1/2 Onion
Recommended variety: Valencia
4 Garlic Cloves
1 Jalapeño
Or 2 if you enjoy the heat
1/2 Lime
1/3 Cup Cilantro
1 Tbsp Adobo Seasoning

Cast Iron Skillet (Or regular frying pan)
Food Processer
Knive and Cutting Board
Broiler (optional)

Step One: Chopping

Chop the ingredients as follows:

Quartered Tomatoes
Chunky Diced Onion
Halved  Jalapeño
Peeled Garlic Cloves

Place these ingredients into your frying pan or cast iron skill. Add the Adobo seasoning (1 tbsp.) Spread them out to make sure the ingredients get plenty of contact with the hot skillet.

Step Two: Cooking

With ingredients in the pan/skillet, heat on the stove on medium heat (Cast iron gets very hot). If you're using a non-cast iron pan, use a higher heat setting. The goal is to get browning on the vegetables, with a touch of charring. This process will also reduce some of the moisture out of the tomatoes to result in a richer salsa. This should take 12-15 minutes

Optional Step: After heating the vegetables on the stove for 8 minutes, switch the pan over to a broiler to get some additional cooking and charring on the tops of the vegetables.

Step Three: Processing

Once the vegetables are cooked, take them off the heat and place them in a container to cool down to room temperature before using the food processor.

Once cooled, add the cooked vegetables to the food processor. Add fresh squeezed lime juice and chopped cilantro.

Fire up the food processor and blend to your liking! This will only take a few seconds. 

Side Note: This is a great time to taste-test the salsa and add extra Adobo seasoning, lime, and salt to taste.

Step Four: Serving

For presentation's sake, add extra slices of lime and cilantro to garnish.

Break out your favorite tortilla chips and party on! You've just created a brilliant homemade salsa from scratch.
